According to the American Kennel Club, dogs can not only eat bell peppers; they are healthy for them. Bell peppers are high in vitamins A, B6, C, E, along with lutein, beta-carotene, and many other antioxidants.
The AKC cautions that you should only give your furbaby small amounts of bell peppers with the stem and seeds removed. They recommend no more than one half a pepper for large breeds and ¼ a pepper at a time for smaller dogs.
