Equipment

  • Mason Jar

Ingredients

  • 1/2 cup Rolled Oats
  • 1/2 cup Coconut Milk (unsweetened)
  • 3 tbsp Peanut Butter (unsalted, creamy)
  • 2 tbsp Stevia Extract (or maple syrup, whichever sweetener is preferred)
  • 1/4 cup Frozen Berries (blueberries, blackberries, raspberries)
  • 1 tsp Cinnamon (ground)

Instructions

  • Start by mixing the rolled oats and the coconut milk in the mason jar. Ensure that the oats are evenly soaked in the milk.
  • If you want your overnight oats to be sweeter, use some maple syrup or stevia extracts. Be careful not to overdo this as the rest of the ingredients are already naturally sweet.
  • Add in the peanut butter. We recommend using the unsalted and creamy variety, but feel free to change this up, based on the taste and texture you prefer.
  • Top your mixture with the frozen berries. Close the jar with the lid and refrigerate overnight. The frozen berries should defrost while being refrigerated overnight.
  • Alternatively, you may refrigerate the mixture without any toppings. Defrost the frozen berries separately. You may add them in the morning instead.
  • Right before eating, add a dash of ground cinnamon. Adjust the amount based on your taste.
